Coconut Shrimp

A new tropical classic. Large shrimp, butterflied for a dramatic presentation, are dipped in a crunchy, nutty coconut batter. This makes for a shrimp that is crispy on the outside and sweet and briny on the inside. A touch of rum in the batter gives it an extra tropical kick. Just fantastic, 12 large shrimp.

Best Cooked from a frozen state.

Baking: Preheat oven to 400°F. Place frozen shrimp on baking sheet sprayed with non stick spray (you may also spray the shrimp for extra browning). Cook 12-14 minutes turning over halfway through cooking time or until golden brown.

Pan Fry: (preferred method for crispest texture) Place frozen shrimp in 1 inch of hot oil, but not smoking oil and fry for 2 1/2 minutes. Turn frequently. Transfer to plate lined with paper towels to drain, and serve immediately.

Do not microwave.
