Prosciutto Wrapped Pork Roast

Thaw under refrigeration for 24 hours. Preheat oven to 350°F, and do NOT remove roast from ovenable film (unless desired, if removed cover with aluminum foil). Place on a foil lined shallow baking sheet on the middle oven rack, and cook for 60-70 minutes. Check temperature (should read 145°F when done, may need 5-15 minutes longer as ovens can vary), and continue cooking if necessary until fully cooked. Remove from oven and let rest for 5-10 minutes before removing the ovenable film. Carefully cut open with scissors, cut and remove trussing twine, slice and serve.
