Stilton cheese may arrive either refrigerated or frozen. If it arrives cold, you can store it in the fridge or freeze it to extend its shelf life. If it arrives frozen, follow the instructions below to enjoy it at its best.
Fridge: Keep Stilton well wrapped and stored in an airtight container in the fridge, where it will stay fresh for up to 2 weeks after opening, becoming creamier and more mellow over time. Remove Stilton from the fridge up to 2 hours before serving to reach room temperature.
Freezer: Stilton can be frozen for up to 1 month. Before freezing, cut into portions and wrap tightly in plastic wrap or foil. To use, defrost in the fridge for 24 hours. A slow defrost is recommended to reduce crumbliness. Once defrosted, consume within 4 days and do not re-freeze.
Serving Tips: To bring true flavor of Stilton on a cheese board or for snacking, loosen the wrapping and allow the cheese to reach room temperature before serving. Try serving with a plum bread or a mango chutney. Full bodied or sweet wines complement Stilton's unique taste.
Cooking Tips:
- For a savory dip or salad dressing, crumble a few ounces of Stilton and with a fork mix in enough plain yogurt to give desired consistency. Add seasonings and lemon juice according to taste.
- Beat some Stilton with half its weight of butter, a little milk, pinch of mace and some sherry to a smooth paste. Press into individual pots, chill well and serve with crudités.
- Mix some Stilton with a little mayonnaise and a few halved, seeded grapes or some pineapple and use to fill a halved avocado pear.
