Premium leg of lamb, raised in Australia, is deboned and butterflied, then stuffed with an intoxicating mix of spinach, red peppers, mushrooms, and feta cheese. Creamy and aromatic, the stuffing is a superb match for the subtle gaminess of the lamb. Simply roast, slice and serve. Approximately 7 lbs., serves 8-10.

Preparation
Completely thaw under refrigeration 48 hours prior to cooking. Preheat the oven to 350°F. Season the roast with salt and pepper. Place the roast in the center of the roasting pan. Bake approximately 2 ½ hours or until the internal temperature is 150°F. Once cooked remove from the oven and let in rest for approximately 15 minutes. Slice and enjoy.
