These classic Maine lobster pot pies suggest a relaxing evening in a seaside cottage. They are loaded with sweet Maine Lobster laced with luscious but light sherry cream sauce, and topped with buttery puff pastry. Packed in reusable ceramic ramekins, they are gorgeous, sumptuous, and delicious. You can't go wrong for lunch, brunch, or dinner.
Keep frozen until ready to use. Thaw in refrigerator overnight or for several hours. Preheat oven to 425°F. Bake on a sheet pan for 15 minutes or until pastry has begun to puff. Reduce heat to 350°F and continue baking for another 5-8 minutes until pastry is golden brown. Remove from oven and allow cooling for 3-5 minutes before serving.
